Hearty Italian Bread, Tomato, Bean soup. Main meal for New Year's Eve supper served with antipasto salad. Canellini beans bring good luck. Ingredients:

3 t. extra virgin olive oil |
4 to 6 cloves garlic, minced |
1 medium to large onion, diced |
1-15 oz. can diced tomatoes |
1-28 oz. can crushed tomatoes |
salt and pepper |
1 qt. chicken stock |
4 cups torn stale bread |
2-15 oz. cans cannelini beans, drained and rinsed |
parmegiano reggiano |
chiffonade of fresh basil. |
Directions:
1. DIRECTIONS: 2. Heat a large soup pot over medium heat. 3. Add olive oil and 3/4 of the onion. Saute until clear and add garlic and continue cooking for 3-4 more minutes. 4. Add tomatoes. Add stock and raise heat to bubbling. 5. Add salt and pepper to taste. 6. Reduce heat to simmer and add bread and beans. 7. Simmer until soup thickens. 8. Adjust seasonings and bowl. 9. Top with cheese, spoonful of onions and fresh basil. Serve. |
