I don't know why baking in a paper bag makes this taste different but this is one of the best apple pie recipes I've ever tried. Ingredients:
6 large baking apple (jonathan or rome are my favorites for pie, or granny smith) |
1/2 cup sugar (use 3/4 cup if apples are very tart) |
2 t flour |
1 t lemon juice |
1 tsp cinnamon |
1 9 or 10 unbaked pie crust |
topping |
1/2 cup sugar |
1/2 cup flour |
1/2 cup butter |
Directions:
1. Preheat oven to 425 f. 2. Peel, core and slice the apples. Sprinkle with lemon juice and toss with 1/2 c sugar, 2 T flour and cinnamon. 3. Pile into piecrust. 4. MIx Flour and sugar for topping and cut in butter using a pastry blender, two knives or your fingers until crumbly. 5. Pile evenly on top of apples. 6. The original recipe call for placing the pie in a plain (no print) brown paper grocery bag, rolling the edge a few times and securing with a paper clip and placing on a cookie sheet to bake. 7. Some people have concerns about that; toxic glue, recycled paper containing contaminants, etc so a safe alternative is to use baking parchment: 8. Take two large pieces and place crossways to each other on a cookie sheet. 9. Place pie in center and bring ends of paper together over pie, fold down (not too close to pie- give it some breathing room) and secure with paper clip. 10. Prepare the pie whichever way you feel comfortable with and place in preheated oven. Bake 55 minutes then uncover and bake another 5 minutes or until brown. 11. (The paper may char a bit around the edges but that's ok. I once caught the bag on fire when I was baking it in a very old gas oven, the kind you had to light each time and fire would flare up out of the vent in the bottom once in while. I put it out right away and the pie still turned out great!) |
