I found this when my yard was producing papaya faster than I could use it. Ingredients:
1 1/2 cups cooked shrimp, peeled and deveined and cut into chunks |
1/2 cup mayonnaise |
2 tablespoons lemon juice |
1/8 teaspoon curry powder |
1 tablespoon minced chutney |
salt and pepper |
2 ripe papayas |
lime wedge |
Directions:
1. Mix shrimp, mayonnaise, lemon juice, curry powder, chutney, salt and pepper together. Cut papayas in half and remove seeds. To serve, pile shrimp salad into papaya halves. Garnish with lime wedges. |
