Papaya Sorbet from Barbados |

This interesting recipe is taken from a cookbook published by the Canadian Women's Club of Barbados. Cooking time is freezing time. Ingredients:
1 ripe papaya, diced (about 1 lb) |
1/4 cup plain low-fat yogurt |
1/2 cup light corn syrup |
1 teaspoon fresh lime juice |
Directions:
1. Place papaya in a 9 inch square baking pan and freeze for about an hour. 2. Place all ingredients into your food processor and process until smooth. 3. Pour into a container and freeze for at least one more hour. |
