Great cake, with great fresh papaya flavor... Ingredients:
1 cup diced ripe papaya |
3 tablespoons water |
1/4 cup fat |
1 cup sugar |
1 egg |
1 1/4 tsp. baking powder |
1/2 tsp. salt |
1/3 tsp. cinnamon and nutmeg |
1/4 sp. ginger |
1 1/4 cup lour |
2 tsp. lemon juice |
1/2 cup raisins |
Directions:
1. Stew papaya and water together until smooth sauce is obtained: press through a coaarse sieve if necessary. Cream shortening and sugar and mix well. Add beaten egg . 2. Sift dry ingredients. Add cooled papaya and dry ingredients alternatey to egg mix. 3. Fold In lemon juice and raisins. Pour into boiled loa pan. Bake at 350 F. for 50 - 60 minutes. |
