Ingredients:
1 cucumber
1 papaya peeled, seeded, cut to 1cm cubes
1 mango peeled, stoned, cut ot 1 cm cubes
2 red chillies seeded and finely chopped
7/20 ounce(s) fresh ginger peeled and grated
1 red onion (small) finely chopped
2 zest and juice of lime
2 tablespoon(s) lemon juice
2 tablespoon(s) thai fish sauce
4 tablespoon(s) olive oil
2 castor sugar
Directions:
1. peel cucumber, halve it length-wise, scoop out seeds, dice to 1 cm, put into bowl
2. add the rest, stir, season with salt and pepper
3. chill for at least 1 hour
