This is a delicious unique risotto incorporating papaya Ingredients:
1 cup arborio rce |
2 cups boiling chicken or vegetable stock |
2 sha;;ots diced |
2 tbs fresh chopped garlic |
1/8 cup white wine |
2 tbs grated parmesan cheese |
6 oz butter butter |
salt and pepper |
1 cup or more fresh papaya chunks |
Directions:
1. Melt 3 ozbuuter and add shallots to soften and then add garlic 2. Add rice and cook 2 minutes. 3. Stir in wine. 4. Add boiling stock, 1/2 cup at a time stiring frequently to gradually aborb all stock ( about 20 minutes ). 5. Add remainder of butter, cheese and salt and pepper to taste. 6. Lastly add fresh papaya chunks and let sit 5 minutres before serving 7. Garnish with some fresh chopped chives for color |
