Papaya, Pineapple and Red Onion Salsa |

I found this with a slew of other papaya recipes one year when my tree was producing more papaya than anyone could eat. Ingredients:
1 papaya, chopped |
1 red bell pepper, diced (use the color you have) |
1 small red onion, chopped |
1 scotch bonnet pepper, minced carefully |
6 tablespoons lime juice |
1/4 cup pineapple juice (use the liquid from canned if you want) |
1/4 cup cilantro, fresh chopped |
Directions:
1. Mix. 2. Chill. 3. Serve. |
