For a tropical presentation, serve this soup in hollowed-out papaya shell halves, and sprinkle with mint and diced mango. If you prefer thinner soup, add more water or orange juice. Ingredients:
2 cups diced peeled papaya (about 2 medium papayas) |
1 cubed peeled ripe mango |
1 cup fresh orange juice |
1/2 cup water |
2 tablespoons fresh lime juice |
2 tablespoons honey |
diced mango (optional) |
chopped fresh mint (optional) |
Directions:
1. Place first 6 ingredients in a blender or food processor; process until smooth. 2. Ladle 1 cup soup into each of 4 bowls; top with diced mango and mint, if desired. |
