A lovely, cool fruit cocktail from the Southern chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947.
Ingredients:
2 cups papayas, cut in balls
mint sprig
1/4 cup lemon juice (fresh is best)
1/4 cup lime juice (fresh is best)
1/2 teaspoon dry mustard
1 teaspoon salt
1/2 teaspoon paprika
3/4 cup sugar
2 cups salad oil
Directions:
1. Place papaya balls in cocktail glasses.
2. Garnish with a sprig of mint.
3. Serve with dressing.
