A lovely, cool fruit cocktail from the Southern chapter of the United States Regional Cookbook, Culinary Arts Institute of Chicago, 1947. Ingredients:
2 cups papayas, cut in balls |
mint sprig |
1/4 cup lemon juice (fresh is best) |
1/4 cup lime juice (fresh is best) |
1/2 teaspoon dry mustard |
1 teaspoon salt |
1/2 teaspoon paprika |
3/4 cup sugar |
2 cups salad oil |
Directions:
1. Place papaya balls in cocktail glasses. 2. Garnish with a sprig of mint. 3. Serve with dressing. |
