This is one of my favorite muffin recipes. The combination of papaya and cashews is sinful. These are so moisty and bursting with flavors. I always make double or triple batches of these since they are so popular at my house. Ingredients:
3/4 cup vegetable oil |
1 cup granulated sugar |
2 eggs |
1 teaspoon vanilla |
1/2 teaspoon salt |
2 cups flour |
3/4 teaspoon baking soda |
3/4 teaspoon ground cinnamon |
1/8 teaspoon ground ginger |
2 cups diced peeled papaya |
1-1/4 cups lightly salted roasted cashew nuts |
Directions:
1. Preheat oven to 400. 2. Prepare pans. 3. In a bowl beat oil and sugar for 2 minutes then add eggs and vanilla and beat 1 minute. 4. In another bowl stir together flour, baking soda, salt, cinnamon and ginger. 5. Add dry mix to wet mix then stir to just combine. 6. Stir in papaya and cashews then spoon batter into pans. 7. Bake 25 minutes. 8. Cool 5 minutes before removing. |
