Mom makes this bread and it is so good. She got the recipe from Southern Living. Ingredients:
1 cup shredded firm papaya |
1/2 cup butter or 1/2 cup margarine, softened |
1 cup sugar |
2 eggs |
1 1/2 cups all-purpose flour |
1 teaspoon baking powder |
1/4 teaspoon baking soda |
1/2 teaspoon salt |
1/2 teaspoon ground cinnamon |
1/2 teaspoon ground allspice |
1/2 teaspoon ground ginger |
1/2 cup raisins |
1/4 cup chopped walnuts |
Directions:
1. Drain papaya very well on paper towels. 2. Cream butter in a mixing bowl, using an electric mixer on medium speed. 3. Gradually add sugar, beating well. 4. Add eggs, one at a time; beat well after each addition. 5. In another bowl, mix together the flour, and next 6 ingredients; add to creamed mixture, stirring well. 6. Stir in papaya, raisins, and chopped walnuts. 7. Spoon batter into a greased and floured 8 1/2x 4 1/2 inch loafpan. 8. Bake in a 350° oven for 1 hour and 10 minutes OR until done. 9. Let cool in pan for 10 minutes; remove bread from pan and let cool completely on a wire rack. |
