Healthy Bran muffins. Very easy to make and taste super. Perfect for the lazy man looking to dump the pop tarts. I make 72 at a time and freeze 60 of them so they are ready in a flash every morn. Leave them all in zipper bags, move to refer 24 hours ahead to thaw. I heat in toaster oven, cut in half and toast about 4 minutes or so Ingredients:
1 1/2 cups white flour |
1 1/2 cups wheat flour |
3 cups natural bran (buy bulk at whole foods cheap cheap) |
3/4 cup raw sugar |
3 tablespoons aluminum free baking powder |
3/4 teaspoon salt |
6 egg whites |
3/4 cup molasses |
1/2 cup canola oil |
2 cups skim milk |
1/4 cup raisins, blueberries or 1/4 cup chocolate chips |
Directions:
1. Mix Dry ingredients together 2. Mix wet ingredients together and stir into dry ingredients 3. Add in Raisins, Choc Chips or Blueberries if you wish. 4. Scoop into Muffin pans sprayed with Olive oil cooking spray. 5. Bake for 26 minutes at 400 degrees, Verify they are done by poking with toothpick in center, when it comes out clean they are done. Cool on Rack. |
