Papas A La Huancana Huancayo-style Potatoes |

Papas a la huancaína a dish consisting of sliced boiled potatoes, served on a bed of lettuce with a slightly spicy cheese sauce with olives. This is not my recipe, I was looking for something to do with Black Mint Paste and ran across it, it sounded good. Read more . After I try it, I'll update with any alterations. Ingredients:
5 fresh yellow peppers |
2 cloves of garlic |
400 g (0.18 lb) of fresh cheese |
1/2 cup of vegetable oil |
2 hard-boiled eggs |
4 black olives |
1 kg (2.2 lb) of potatoes |
lettuce |
salt |
Directions:
1. Heat a little of vegetable oil in a pan and fry the cut yellow peppers and the whole garlics. 2. Beat this preparation and add the cheese and the oil, beating until it gets a cream. If it’s too much dense, you can add a little of milk. 3. Serve over cooked potatoes cut in halves. Decorate with sliced eggs, olives and lettuce. |
