When I worked at Panera Bread I always brought home a loaf of their rosemary and onion focaccia bread. I came up with this sandwich then..It's a great way to eat that tomato you just picked. Ingredients:
1 loaf focaccia |
4 tomatoes, thinly sliced |
1/2 red onion, thinly sliced |
6 oz. mozzarella, fresh and sliced |
fresh basil leaves |
your favorite balsamic dressing |
Directions:
1. Slice focaccia loaf in half 2. Arrange cheese on bottom half on bread 3. Top with tomatoes 4. Then onion 5. Now Basil 6. Sprinkle with balsamic dressing 7. Top with bread 8. Cut into 4 wedges 9. Enjoy |
