A classic Italian salad made with toasted chunks of bread tossed with colorful veggies, seasonings and a splash of vinegar. Ingredients:

pam olive oil no-stick cooking spray |
1/2 loaf (16 oz each) french bread, cut into 1-inch cubes |
2 medium tomatoes, chopped |
1 medium green or yellow bell pepper, chopped |
1/3 cup chopped red onion |
1 cloves fresh garlic, minced |
1/4 cup fresh basil leaves, chopped |
2 tablespoons balsamic vinegar |
1/4 teaspoon salt |
Directions:
1. Spray large skillet with cooking spray. Place bread in skillet; spray evenly with cooking spray. 2. Cook over medium heat 5 minutes, or until bread is lightly browned, stirring occasionally; cool. 3. Combine tomatoes, bell peppers, onions, garlic, basil, vinegar and salt in large bowl; spray evenly with cooking spray. Add bread; toss lightly. |
