This is a rustic, Italian salad made with day old bread,fresh tomatoes and mozzarellla cheese. Ingredients:
6 c day old bread,torn in bite- size pieces |
1/3 c olive oil |
salt and pepper |
3 cloves garlic,minced |
1/4 c olive oil |
2 tb balsamic vinegar(i use white balsamic) |
4 med. ripe tomatoes,cut in wedges |
3/4 c sliced red onion |
10 basil leaves,shredded |
1/2 c pitted and halved green olives(i use black or kalamata) |
1 c fresh mozzarella,cut in bite- size pieces |
Directions:
1. Preheat oven to 400 degrees. 2. In large bowl, toss bread with 1/3 c olive oil,salt,pepper,and garlic. 3. Lay bread on baking sheet and toast in oven until golden,5 to 10 mins;allow to cool slightly. 4. While bread is in oven,whisk together 1/4 c balsamic vinegar and olive oil. Gently toss the bread,tomatoes,onion,basil,olives and mozzarella cheese. Toss with the vinaigrette and let stand 20 mins before serving. |
