Panzanella: Italian Bread Salad |

This is my son's favorite salad. What's not to love in it!!! Thanks Emeril!!! Ingredients:
1/2 loaf french bread, cut into 1-inch cubes |
1 tablespoon olive oil (for frying) |
salt and pepper |
3 tablespoons basil, chiffonade |
3 tablespoons extra virgin olive oil |
1 tablespoon balsamic vinegar |
1 teaspoon garlic, minced |
4 roma tomatoes, cut into 1 . 2-inch slices |
1/4 lb fresh mozzarella cheese, cut into 1/2-inch slices |
Directions:
1. For Croutons:. 2. In large saute pan, heat the olive oil. 3. When smoking hot, add the bread cubes and fry until golden, about 3-4 minutes. 4. Stire often to prevent from sticking. 5. Remove from pan and drain on a paper-lined plate. 6. Season with salt and pepper. 7. For Salad:. 8. Toss the remaining ingredients together in a mixing bowl. 9. Season with salt and pepper. 10. To Assemble:. 11. Toss the fried bread with the other ingredients and place on a platter. 12. Can be made ahead of time by keeping the bread separate until serving. |
