salad |
1 large ripe tomato, cut into 1 inch pieces |
1 small cucumber, halved, seeded and cut |
1 red bell pepper, seeded cut into 1 inch pieces |
1 yellow bell pepper, seeded cut into 1 inch pieces |
1/2 red onion, halved and thinly sliced |
10 large basil leaves, sliced nto thin strips |
1 bag lettuce |
croutons |
2 tbsp extra virgin olive oil |
1/2 small loaf french bread, cut into 1 inch cubes |
vinaigrette |
1/2 small garlic clove, mashed to a paste or minced |
2 tbsp red wine vinegar |
5 tbsp extra virgin olive oil |
kosher salt and freshly ground pepper |
Directions:
1. for salad: in large bowl, toss together the tomato, cucumber, peppers, onion, basil and lettuce. Add the croutons and vinaigrette to taste. Toss gently. Set aside to allow croutons to soak up the vinaigrette, 10 to 20 minutes. 2. For Croutons: In large pan over medium heat, warm oil. Add the bread and cook, stirring as needed, until golden brown, about 4 minutes. Using a slotted spoon transfer croutons to a paper towel lined plate to drain. cool to room temp. 3. For Vinaigrette: in a small bowl whisk garlic and vinegar. Slowly add the oil in a steady stream, whicking to emulsify. Season with salt and pepper. |
