This Italian Bread Salad is not very traditional but looks to be very tasty. From landolakes. com. Ingredients:
3 tablespoons butter, softened |
1 tablespoon fresh garlic, minced |
4 1/2 to 3/4 slices italian or vienna bread |
10 ounces package romaine greens |
2 cups small broccoli florets |
1 1/2 cups cherry tomatoes, halved |
4 ounces mozzarella cheese, 1/2 cube |
1/4 cup pitted ripe olives |
2/3 cup italian salad dressing |
Directions:
1. Heat broiler. 2. Combine butter and garlic in small bowl. 3. Spread butter over both sides of bread slices. 4. Place onto UNgreased baking sheet. 5. Broil 4 to 6 away from the heat, turning once, until lightly toasted (4 to 5 minutes). 6. Cut bread slices into 1 pieces. 7. Place all remaining ingredients EXCEPT salad dressing in a salad bowl. 8. Toss lightly. 9. Add dressing and toss until well coated. 10. Add bread cubes. 11. Toss lightly. 12. **Can be made up to 2 hours ahead. |
