Italian appetizer....great by itself or side with chicken or fish.. Ingredients:
3 cups day old italian bread |
2 large ripe tomatoes |
1 cucumber |
1/2 cup diced red onion |
3 garlic cloves, minced |
1/4 cup red wine vinegar |
3/4 cup extra virgin olive oil |
fresh basil |
salt and pepper |
Directions:
1. Cut bread into 1 inch cubes, season and toast in oven at 400. 2. In a large mixing bowl combine all of the ingredients except for the oil and vinegar. 3. In another bowl combine oil and vinegar to make the dressing. 4. Drizzle over salad and serve. 5. Garnish with basil leaves. |
