Pants off Dance off Beef Pita Pockets |

There used to be a terrible late night MTV show called Pants off Dance off . My friends and I came home after a night on the town and I had this recipe already made up. We heated up the meat, stuffed the pitas, and danced around the living room emulating the contestants on the show. I don't know if it was the occasion or the food, but my friends have never forgotten my pants off dance off pitas. Ah...College. Ingredients:
1 tablespoon oil |
1 lb ground beef |
1 small onion, chopped |
1 teaspoon garlic, minced |
2 cups cauliflower florets |
1 red bell pepper, diced |
19 ounces cannellini beans, drained |
1/2 cup raisins |
1/2 cup ketchup |
1 tablespoon apple cider vinegar |
2 teaspoons thyme leaves |
1 teaspoon marjoram |
1/4 teaspoon cinnamon |
1 dash ground cloves |
1/2 teaspoon salt (optional) |
1/2 teaspoon pepper (optional) |
Directions:
1. Heat oil over med-high heat. 2. Add beef, onion, & garlic until meat is no longer pink. 3. Drain on paper towels if it's a fatty cut. 4. Return to pan. 5. Add all remaining ingredients & simmer on low for 10 minutes. 6. Spoon into warmed pita bread pockets. |
