Pannetone French Toast With Coconut Milk |

If you want a healthier version, use low-fat yogurt instead of the cream. Ingredients:
1/2 vanilla bean, scraped |
2/3 cup coconut milk |
2 eggs, lightly beaten |
2 tablespoons sugar |
1/4 teaspoon ground cardamom (optional) |
4 tablespoons butter |
8 slices panettone or 8 slices other sweet bread |
confectioners' sugar, for dusting |
blueberries |
whipped cream |
Directions:
1. Put the coconut milk, eggs, sugar, vanilla seeds, and cardamom in a bowl and beat well. Pour into a shallow dish. 2. Over medium heat, heat half the butter into a large skillet. 3. Dip each slice of bread into the egg mixture and cook until golden brown on both sides. 4. Serve dusted with confectioner's sugar and topped with blueberries and cream. |
