But with my favorite new bread crumb, The Panko. Light and flakey and so good. No eggs, just lotsa butter , dijon and garlic. Ingredients:
4 chicken breast halves, skinned and boned |
1/2 cup butter |
1 garlic clove, minced |
1/3 cup dijon mustard |
1 1/2 cups panko bread crumbs |
1/3 cup grated parmesan cheese |
prep time includes chill time. |
Directions:
1. Heat butter and garlic in small skillet, simmer 5 minutes. 2. Stir in mustard and mix well. Remove from heat and cool slightly. 3. Combine Panko and Parmesan on small plate. 4. Dip chicken in butter/garlic mixture, then dip in The Panko mixture,pat the crumbs on to coat each chicken piece well. 5. Cover and chill the chicken at least 2 hours to set coating. 6. Bake at 350 for 35 to 40 minutes until golden brown. 7. Delicious, serve with Dijon Mustard Sauce, or top with your favorite marinara. |
