Panko Crusted Zucchini Sticks |

I like these dipped in Chipotle Aioli while my husband prefers Marinara sauce Ingredients:
1 zucchini, cut into 1/2 in. x 3 in. sticks |
olive or canola oil to fry |
1 cup flour |
2 eggs, beaten |
1 1/2 cups panko bread crumbs, if not seasoned add 1 tbls. italian seasoning |
1/4 cup grated parmesan cheese |
salt and pepper to taste |
Directions:
1. Heat oil to medium high 2. In bowl, add flour 3. In another bowl, add eggs 4. In last bowl, add panko, cheese, salt and pepper and mix to combine 5. Dip zucchini sticks into flour, then egg and lastly, panko....shaking off excess after each dip 6. Add to skillet and fry on each side until golden brown 7. Remove to baking rack and sprinkle with salt immediately 8. Serve with your favorite dipping sauce....mine is 9. Chipotle Aioli |
