Pankekes (Crepes or Peruvian Pancakes) |

Pankekes are traditionally eaten with manjarblanco (also called dulce de leche) in Peru. They're thinner than regular pancakes. Ingredients:
2 eggs |
2 cups flour |
1/3 cup sugar |
1 1/2 cups milk |
butter |
Directions:
1. Combine and blend all ingredients in blender. 2. Before pouring each pancake in the pan, slice a piece of butter so that the pancakes don't stick. 3. Pour 2 large spoonfuls of mix into pan and move the pan around so the mix spreads to be thinner. 4. Flip and enjoy! |
