Traditional Filipino recipe. It may not look appetizing but it tastes delicious. My husband had to cover his eyes the first time he ate it but he said it tasted completely different then it looked. My son, the picky eater and Gordon Ramsey wannabe, even had multiple servings of this dish. Ingredients:
1 (8 ounce) package pancit bihon noodles |
1 cooked chicken breast, shredded (i boil chicken in some chicken broth) |
2 cups chicken broth |
3 leaves green cabbage (if you like more cabbage i suggest using 1/4 cabbage) |
1 small onion, peeled and chopped |
3 garlic cloves, minced |
1/3 cup green onion, chopped |
1 carrot, sliced into thin strips |
2 tablespoons olive oil |
3/4 cup diced celery |
3 tablespoons soy sauce |
salt & pepper |
1 lemon |
Directions:
1. Soak Pancit bihon noodles in warm water to soften; approx 7-10 minutes. After soak time place on cutting board and cut into 1-2 inch pieces. 2. In large wok or pan saute garlic and onion (not green) in olive oil. 3. Add chicken broth, shredded chicken and all vegetables until cooked. Approx 20 minutes. 4. Mix pancit noodles and add soy sauce cook for 5 minutes or until broth is soaked up and noodles are soft. 5. Add salt and pepper to taste. Cut lemon in half and squeeze juice over dish; stir and serve. You may not need whole lemon, depends on your taste. |
