Pancetta-shallot Roasted Asparagus

Pancetta wrapped asparagus adds a crispy contrast to the tender spears.
Ingredients:
24 med-thick asparagus spears
1 1/2 tbs evoo
24 thin slices pancetta
couple minced shallots
salt and pepper
Directions:
1. heat over to 425
2. Arrange asparagus in a single layer on rimmed baking sheet; lightly brush with some of the oil.
3. Roll 1 slice pancetta around center of each asparagus spear
4. Sprinkle with shallots
5. Drizzle or lightly brush with remaining oil; sprinkle with salt and pepper to taste.
6. Bake 12-15 mins or until pancetta is lightly crisp and asparagus is lightly browned.
