Pancetta And Goat Cheese Frittata

Yum Yum come get some! I purposefully left out salt because the meat and cheese are very salty on their own. (photo from )
Ingredients:
8 eggs
1/2 tsp black pepper
2 tsp basil
4 oz goat cheese
6-8 oz pancetta (depends on how meaty you like it)
1 tsp olive oil
2 t yellow onion, diced
Directions:
1. Beat eggs in large dish.
2. Add pepper and basil and set aside.
3. Cut goat cheese into small cubes. (I know it's mushy but it will keep some shape and with the cheese in cubes instead of being melted in there are bursts of flavor rather then the cheese getting lost in the egg flavor)
4. Cut pancetta into thin strips.
5. Heat olive oil in a medium size skillet over medium heat.
6. Lightly sauté onion until translucent.
7. Pour egg mixture into skillet and add pancetta.
8. Once eggs begin to set add cheese.
9. Cover and cook over low heat for 5 min.
10. Loosen and slide onto plate.
