From the American Diabetes Association. low-fat cottage cheese, eggs, whole-wheat flour, unbleached white flour, canola oil, brown sugar, low sugar jam, fresh or frozen berries cvt Ingredients:
2 cups low-fat cottage cheese |
2 eggs |
1/2 cup whole-wheat flour |
1 cup unbleached white flour |
1 1/2 tbsp canola oil |
2 tbsp brown sugar |
136 g (1/2 cup) smucker's sugar-free blackberry jam |
1/2 cup blackberries, fresh or frozen, thawed (or any other berry) |
Directions:
1. Mix the cottage cheese in a blender until smooth. Combine all ingredients except the jam and fruit in a bowl, add the cottage cheese, and mix until blended. 2. Cook on a nonstick griddle over medium heat until browned on both sides, about 5-7 minutes. 3. Meanwhile, heat the jam in a saucepan until melted. Add the fruit and heat for 2 minutes. Pour over hot pancakes to serve. |
