Thin crepes served in Europe. Specialty of England on Shrove Tuesday or Mardi Gras Ingredients:
4 oz plain flour |
1 pinch salt |
2 large eggs |
200 ml milk |
75 ml water |
2 tbsp butter, melted |
1 tsp butter |
Directions:
1. Sift the flour and salt. Make a well in the center. 2. Crack the eggs into the well. 3. USe a fork, hand or electric wisk to whisk the eggs in to the flour, a little at a time. 4. Mix together the water and milk and gradually add this mixture to the eggs and flour, whisking all the time. 5. Make sure all the flour has been incorporated. 6. This batter can wait until you are ready to cook. 7. When ready, add the melted butter and mix well. 8. Heat a small amount of butter in a frying pan until it is really hot. Pour off the butter and ladle 2 tbsp of the batter into the pan. 9. Swirl the mixture over the bottom of the pan. Let it cook for about a minute, until the batter all goes slightly darker. Flip the pancake over and cook a few seconds on the other side. 10. Serve each pancake with lemon juice and sugar, or with chocolate and cream, or with anything else you like, savoury or sweet. |
