Pancakes From International House of Pancakes - Modified Version |

I've modified my favorite pancake recipe to lower the fat and sugar. I think they are just as good as the original! Ingredients:
1 1/4 cups all-purpose flour |
1/4 cup egg beaters |
1 1/3 cups buttermilk |
2 tbsp granulated sugar |
1 tsp baking powder |
1 tsp baking soda |
1/4 cup unsweetened applesauce |
1/4 tsp salt |
Directions:
1. Spray a large nonstick skillet lightly with cooking spray. Preheat over medium-low to medium heat. 2. Combine all ingredients and blend until smooth. 3. Pour scant 1/4 cups of batter into the hot pan forming approx. 4-inch circles. 4. When the edges start to bubble and appear firm and the underside is light brown (about 1 minute), flip the pancakes and lightly brown the other side. (Watch closely, they brown quickly!) |
