Pancakes From International House of Pancakes - Modified Version

I've modified my favorite pancake recipe to lower the fat and sugar. I think they are just as good as the original!
Ingredients:
1 1/4 cups all-purpose flour
1/4 cup egg beaters
1 1/3 cups buttermilk
2 tbsp granulated sugar
1 tsp baking powder
1 tsp baking soda
1/4 cup unsweetened applesauce
1/4 tsp salt
Directions:
1. Spray a large nonstick skillet lightly with cooking spray. Preheat over medium-low to medium heat.
2. Combine all ingredients and blend until smooth.
3. Pour scant 1/4 cups of batter into the hot pan forming approx. 4-inch circles.
4. When the edges start to bubble and appear firm and the underside is light brown (about 1 minute), flip the pancakes and lightly brown the other side. (Watch closely, they brown quickly!)
