Ingredients:
2 cups all-purpose baking mix
1 1/3 cups milk
1 egg
2 tbsp sugar
Directions:
1. Preheat griddle to 375 degrees (Griddle is ready when drops of water dance around a few seconds before evaporating.)
2. Stir all ingredients together until blended
3. Bake on hot, lightly greased griddle using slightly less than 1/4 cup batter for each pancake
4. Cook until bubbles break on surface
5. Turn; cook until golden
