adapted from Joy of Cooking (c)1931 Ingredients:
1 1/2 cups flour, white self-rising |
2 eggs |
3 tablespoons butter, melted |
3 tablespoons sugar |
1 1/4 cups milk, whole |
Directions:
1. sift & measure flour 2. mix with sugar 3. slightly beat eggs & mix with butter & milk 4. pour milk mixture into flour and whisk until blended. lumps will remain 5. allow to stand for about an hour, then stir again 6. bake on griddle 7. serve with dark amber maple syrup and fresh blueberries 8. also good when fresh blueberries are dropped onto batter on griddle 9. some prefer whipped cream to syrup |
