I found this in my mom's Betty Crocker cookbook that she has had for years. Ingredients:
1 egg |
1 cup all-purpose flour (if using self rising flour, omit baking powder and salt.) |
3/4 cup milk |
2 tablespoons vegetable oil |
1 tablespoon white sugar |
3 teaspoons baking powder |
1/2 teaspoon salt |
Directions:
1. Beat egg with hand beater until fluffy. 2. Beat in remaining ingredients just until smooth. 3. For thinner pancakes, stir in an additional 1/4 c milk. 4. Grease heated griddle (To test griddle, sprinkle with a few drops of water. If bubbles skitter around, heat is just right.). 5. Pour about 3 tbsp batter from tip of large spoon or from pitcher onto hot griddle. 6. Cook pancakes until puffed and dry around edges. 7. Turn and cook other side until golden brown. |
