Pan-Seared Veal with Capers, Lemon, and Artichokes |

This is 3 WW points. Excellent Use veal loin. Ingredients:
1 cooking spray, olive oil, (5 one-second sprays) |
1 lb veal |
1/8 t salt |
1/8 t black pepper |
1/2 c fat free chicken broth, reduced sodium |
14 oz canned artichokes, hearts, without oil, drained and halved |
2 t capers, drained |
2 t fresh lemon juice |
1 t dried oregano |
4 t parsley, chopped, fresh |
Directions:
1. Coat a large non-stick skillet with cooking spray and set pan over medium-high heat. Season both sides of veal chops with salt and pepper. Add veal to hot pan and cook until golden brown, about 2 minutes per side. 2. Add broth, artichoke hearts cut in half, capers, lemon juice and oregano to pan, and bring to a simmer. Simmer until veal is ccoked throught, about 8 to 10 minutes. 3. Remove from heat and add parsley. Serve hot. Yields about 3 ounces of veal and 1/2 c of artichoke misture per serving. |
