Pan Seared Tuna with Smokey Lobster Butter Sauce |

Ingredients:
4 (6 ounce) tuna steaks |
salt |
fresh ground black pepper |
unsalted butter |
2 (3 ounce) cold water lobster tails |
1/2 cup white wine |
shallot |
1/2 cup heavy cream |
1/4 lb unsalted butter, cut up |
paprika |
salt |
pepper |
Directions:
1. Salt and pepper tuna steaks. 2. Add butter to a hot pan; reduce heat to medium and add steaks. 3. Cook 2 minutes per side; remove and let rest. 4. Bring wine, shallot whites and lobster tails to a boil in a non-reactive pan. 5. Lower the heat and reduce the mixture by half. 6. After 3 minutes remove the tails and dice them. 7. Continue reducing the wine again, add the cream and paprika. 8. Reduce by half; remove from heat. 9. Stir in butter one piece at a time. 10. Strain sauce and add the diced lobster. |
