Pan-Seared Pork Chops with Applesauce

Homemade applesauce takes just minutes in the microwave, making a classic sweet-tart complement for pork chops.
Ingredients:
4 cups sliced peeled red delicious apple (about 2)
1/4 cup water
2 tablespoons brown sugar
1 tablespoon cider vinegar
1/8 teaspoon ground cinnamon
1/8 teaspoon salt
1 teaspoon canola oil
4 (4-ounce) boneless center-cut loin pork chops (about 1/2 inch thick)
1/4 teaspoon salt
1/4 teaspoon freshly ground black pepper
Directions:
1. Combine the first 5 ingredients in a medium microwave-safe bowl, and toss well. Cover with plastic wrap, and microwave at HIGH 12 minutes or until tender. Cool 5 minutes. Place apple mixture in a food processor, and process until smooth. Stir in 1/8 teaspoon salt.
2. Heat oil in a large nonstick skillet over medium-high heat. Sprinkle pork on both sides with 1/4 teaspoon salt and pepper; add to pan. Cook 4 minutes on each side or until pork is done. Let stand 5 minutes. Serve with applesauce.
