Pan-Seared Beef with Wasabi Sauce |

From Redbook: Flavor Rules! Sounds gooooooooood to me! Ingredients:
1 1/2 teaspoons wasabi powder |
1 tablespoon cold water |
2/3 cup sour cream |
1 tablespoon chives or 1 tablespoon green onion, snipped |
1 tablespoon parsley, chopped |
2 teaspoons tarragon vinegar |
1/4 teaspoon salt |
1 tablespoon vegetable oil |
4 (8 ounce) boneless beef steaks |
1/4 teaspoon salt |
Directions:
1. In a medium bowl, combine wasabi powder with cold water and stir until smooth. 2. Add sour cream, chives, parsley, vinegar and 1/4 tsp salt and stir to combine. 3. Cover and refrigerate until ready to serve. 4. (It is important that you make this sauce first, as wasabi needs a bit of time for it's flavors to develop.) In a 10 skillet, heat oil over medium-high heat. 5. Sprinkle beef with remaining salt. 6. Sear about 3 minutes on each side for rare. 7. Reduce heat to medium and cook, turning occasionally, about 5 minutes per side for medium-rare. 8. Serve with wasabi sauce. |
