A great tasting recipe I found on the internet the last time scallops were on sale here. Ingredients:
2 tb olive oil |
2 cloves garlic, minced |
1 1/2 lbs. sea scallops, sliced widthwise |
4 plum tomatoes, diced small |
6 scallions, chopped |
2 jalapeno chilies, finely chopped |
1/2 c. tequila |
2 tb prepared hot sauce |
1 tsp salt |
2 limes (one juiced and one cut in wedges for garnish) |
1/4 c. butter, room temperature |
Directions:
1. In large skillet, heat oil and saute garlic for 1 minute, stirring until lightly browned. Add sea scallops and saute for 4 minutes, or until browned on both sides. Stir in tomatoes, scallions and chilles. Add tequila carefully, it may flare up as you add it. Bring to a boil and reduce slightly. 2. Add hot sauce, salt and lime juice. Lower heat to just above simmer and stir in butter. When butter is incorporated into the sauce, remove from heat and serve garnished with lime wedges. |
