Pan-Fried Potatoes With Paprika and Lemon

A nice side dish that goes well especially with German entrees. From Bon Appetit, June 1998.
Ingredients:
3 tablespoons olive oil
2 1/4 lbs russet potatoes, unpeeled, 1 1/2-inch pieces
1 medium onion, chopped
1 teaspoon hungarian paprika
2 tablespoons fresh lemon juice
2 tablespoons italian parsley, chopped
Directions:
1. Heat oil in heavy large pot over high heat.
2. Add potatoes and saute until beginning to brown, about 12 minutes.
3. Reduce heat to medium.
4. Add onion; saute until onion is just tender, about 4 minutes.
5. Mix in paprika.
6. Cook until potatoes are tender, stirring occasionally, about 5 minutes.
7. Sprinkle potato mixture with lemon juice and parsley.
8. Season with salt and pepper.
