Pan Fried Potatoes With Lemon |

Gourmet. April 2004. Ingredients:
2 tablespoons olive oil |
1 1/2 lbs boiling potatoes, cut in 1/2 inch cubes |
6 scallions, chopped (white and green separately) |
1 teaspoon lemon zest |
Directions:
1. Heat oil in skillet, then saute potatoes and white parts of the scallions, stirring frequently until potatoes are brown and tender; 15-20 minutes. 2. Stir in scallion greens and zest and saute, stirring for 2 minutes. 3. Season with salt and pepper. |
