Ingredients:
1/2 cup yellow cornmeal
1 teaspoon paprika
1/2 teaspoon pepper
1/4 teaspoon salt
1/4 teaspoon onion powder
1/4 teaspoon ground celery seeds
1/4 teaspoon dry mustard
4 (6-ounce) farm-raised catfish fillets
1/4 cup fat-free milk
1 tablespoon vegetable oil
Directions:
1. Combine first 7 ingredients. Dip fish in milk; dredge in cornmeal mixture.
2. Heat oil in a nonstick skillet over medium-high heat. Add fish; cook 3 minutes on each side or until fish flakes easily when tested with a fork.
3. Serve immediately.
4. Tip: Serve with Baked Hush Puppies and Colorful Coleslaw.
