a delicious thai-ish chicken, on top of a decent salad, with thanks to a great Margaret Cho bit for the name! Ingredients:
1 lb chicken breast, boneless, skinless, cut into bite-sized pieces |
1 tbsp lite soy sauce |
3 tbsp peanut sauce |
1 tbsp orange juice |
2 cups romaine lettuce |
2 cups iceberg lettuce |
1 cup mandarin oranges |
8 baby carrots, chopped |
2 tbsp almonds, blanched, slivered |
1/4 cup cucumber, sliced and quartered |
Directions:
1. brown the chicken in a frying pan, in just a spray of canola. 2. add the soy sauce, peanut sauce, and orange juice to the pan, allow the sauce to simmer and thicken, turning once or twice. 3. meanwhile, put the lettuces in a big bowl. 4. chop and add the carrots and cucumber, then toss. 5. cut the chicken into bite sized pieces, add to salad. 6. top with oranges and almonds. 7. enjoy! |
