Pamelas Garden Egg Scramble |

I love to make this on Saturday mornings. It's healthy, filling, delicious, easy and quick! Ingredients:
4 large eggs |
dash kosher salt |
splash of milk |
evoo |
1/2 green bell pepper, chopped |
1 shallot, minced |
1 roma tomato, diced |
handful of mexican blend, grated cheese |
salsa or hot sauce (i love cholula hot sauce!) |
Directions:
1. Saute peppers, shallot and tomatoes in EVOO with a dash of salt until tender. 2. ****(You can really add any of your fave veggies right from your fridge or garden!)**** 3. Crack eggs into bowl and mix with a splash of milk 4. Add eggs to veggie mixture and scramble over medium heat. 5. Mix in cheese right before eggs are cooked completely 6. Once cheese melts, remove from heat and serve. 7. Top with salsa or hot sauce 8. *********************************************************************** 9. Serve with toast and fruit and you have a delicious, well balanced meal! 10. Enjoy! |
