Pamelas Crockpot Beef Stew |

I came up with this yesterday on a cold, Texas December day! The house smelled amazing all day and the results were comforting, tasty and hearty! Enjoy! Ingredients:
1 1/2 lbs cubed beef, stew meat |
2 cups beef broth |
3/4 cup dry red wine |
1 pkg french onion soup mix |
several splashes worcestershire sauce |
1 bay leaf |
1 tbs tomato paste |
1/2 (or whole) yellow onion, sliced |
1 large bell pepper, cut into chunks |
(you could also add a handful of fresh, button mushrooms and 1 large zucchini, cut into chunks) |
1-2 tbs cornstarch |
2-3 tbs water |
Directions:
1. Combine all ingredients, except the cornstarch and water, in crockpot. 2. Turn on low 3. Cook for 8-9 hours 4. Just before it's done, mix together cornstarch and water, with a whisk and add to stew...this will slightly thicken 5. Remember to remove Bay Leaf. 6. Serve over rice or pasta & enjoy! |
