I just threw this together today when trying to use up pantry and fridge items. So fresh, yummy, tasty, zesty, and healthy! Hope you enjoy! Ingredients:
romaine lettuce |
red bell pepper, chopped |
cucumber, chopped |
1/2 avocado, chopped |
artichoke hearts, chopped |
black olives, sliced |
1/2 tbs capers |
drizzle of evoo |
juice of 1/2 of a lemon |
very small pinch of kosher salt |
small pinch of pepper |
Directions:
1. Layer all veggies on top of romaine lettuce 2. Drizzle Olive oil on top 3. Squeeze lemon juice over top 4. pinch salt & pepper (opt) 5. mix, and ENJOY! 6. **(For a heartier meal, you can add deli turkey and mozarella cheese!...I recommend string cheese, cut into chunks) |
