Pam Najera's Mom's Devils Food Cake and Frosting |

This recipe came from Pam Najera whom I worked with for 27 years at ARC. She is/was an wonderful friend and boss (for a short time). She made this cake and when I asked agreed to give me the recipe. It is moist, yummy and the ultimate in chocolate! Ingredients:
2 cups flour |
1 3/4 cups sugar |
1/3 teaspoon baking powder |
1 3/4 teaspoons baking soda |
1 teaspoon salt |
2/3 cup cocoa |
2/3 cup crisco |
1 cup water |
1 teaspoon vanilla |
3 eggs |
1 cup milk |
5 tablespoons flour |
1/2 cup butter, softened |
1/2 cup crisco |
1 cup sugar |
1 teaspoon vanilla |
Directions:
1. Preheat oven to 350 degrees. 2. To make cakes - Sift dry ingredient together in large bowl. Add Crisco, water and vanilla, beating until well mixed. 3. Add eggs and beat well. 4. Pour into 2 9 round pans that have been greased and floured well. May also use 8 pans. 5. Bake 30-35 minutes for 9 pans or 35-40 minutes for 8 pans. 6. Cool in pans for about 10 minutes and then turn onto rack and cool completely. 7. To make frosting - combine milk and flour in a saucepan. Cook until thick. Cover and refrigerate. In a mixing bowl, beat butter, Crisco, sugar and vanilla until creamy. Add chilled flour mixture and beat 10 minutes. 8. Frost the cake and enjoy! |
