My toddler went beserk over this vegetarian salad on offer at the Palm Grove Resort in Rarotonga in the Cook Islands. Shirley, the owner, was kind enough to share the recipe. Very simple, very quick and as my toddler says... Nummy, dicious (Yummy, delicious)...more please! Ingredients:
papaya, flesh cut into bitesized pieces |
mayonnaise, eg best foods |
curry powder |
Directions:
1. Add 1-2 T of curry to approx 1 cup of a thick white mayonnaise. 2. Mix through the chopped papaya. |
