Palm Court Scampi Provencale |

This recipe is from the Palm Court at the Scottsdale Arizona Conference Resort, courtesy of the San Antonio Express News. Ingredients:
20 large shrimp |
1/2 cup tomato, diced |
1 tablespoon shallot, chopped |
1 teaspoon garlic, chopped |
2 tablespoons parsley, chopped |
6 ounces butter |
1/2 cup white wine |
1/2 teaspoon oregano |
1/2 teaspoon basil |
2 ounces olive oil |
salt & pepper, to taste |
Directions:
1. Wash shrimp, peel and butterfly, leaving tails on. 2. Preheat oil in skillet. 3. Place shrimp in pan for approximately 2 minutes on each side. 4. Remove from pan. 5. Add butter, garlic and shallots, and sauté lightly. 6. Add wine, seasonings and tomatoes. 7. Bring to a boil. 8. Add shrimp and heat quickly, then serve immediately. |
