This recipe is from the Palm Court at the Scottsdale Arizona Conference Resort, courtesy of the San Antonio Express News.
Ingredients:
20 large shrimp
1/2 cup tomato, diced
1 tablespoon shallot, chopped
1 teaspoon garlic, chopped
2 tablespoons parsley, chopped
6 ounces butter
1/2 cup white wine
1/2 teaspoon oregano
1/2 teaspoon basil
2 ounces olive oil
salt & pepper, to taste
Directions:
1. Wash shrimp, peel and butterfly, leaving tails on.
2. Preheat oil in skillet.
3. Place shrimp in pan for approximately 2 minutes on each side.
4. Remove from pan.
5. Add butter, garlic and shallots, and sauté lightly.
6. Add wine, seasonings and tomatoes.
7. Bring to a boil.
8. Add shrimp and heat quickly, then serve immediately.
